Spicy Black Beans with Onions & Bacon



Dairy Free Nut Free Fish Free Soy Free Gluten Free 

A nice spicy change to serving black beans. Great as a side dish when serving tacos or quesadillas.

1/3 pound bacon
1 large yellow onion, chopped
4 large garlic cloves, chopped well
1 - 4-ounce can diced green chilies (check label for allergens)
1 - 16-ounce can diced peeled tomatoes (check label for allergens)
2 - 15 to 16 ounce cans black beans, rinsed and drained well
2 tablespoons chili powder
Salt and pepper, to taste
Optional: ¼ to 1 teaspoon cayenne pepper (to taste)

In a large deep skillet cook the bacon until done. Remove from the pan and let drain & cool on a plate lined with paper towels. Discard excess grease from skillet, leaving a bit in the pan. Next cook the chopped garlic and onion in the same skillet until onion is translucent & soft, about 4-5 minutes.
Add all remaining ingredients. Simmer for about 10 minutes, stirring frequently.
Serves 6.
