Gluten-Free Tapioca Pudding



Nut Free Fish Free Soy Free Gluten Free 

Quick & easy for a weekday dessert! Serve warm or chilled.

1/3 cup (75 mL) sugar
3 tbsp (45 mL) Club House Minute Tapioca
1 pinch of salt
1 large egg
3 cups (750 mL) milk
1 ½ tsps (7 mL) Club House (or McCormick) Pure Vanilla Extract


In large, heavy saucepan, whisk together sugar, Club House Minute Tapioca, salt, milk and egg. Let stand 5 minutes.

Slowly bring to a boil over medium heat, whisking constantly, until mixture comes to a full boil (about 17 minutes). Remove from heat and stir in Club House Pure Vanilla Extract.

**Let cool 20 minutes whisking twice. Pudding thickens as it cools. Stir pudding and spoon it into dishes. Serve warm or chilled. Store left over pudding in refrigerator

Microwave Directions:

In 2 qt (2 L) microwave safe bowl, whisk together sugar, Club House Minute Tapioca, salt milk and egg. Let stand 5 minutes. Microwave on MEDIUM power for 15 minutes, whisking every 5 minutes. Microwave at MEDIUM-LOW for 5 minutes, whisking twice. Remove from microwave oven and stir in Club House Pure Vanilla Extract. Continue as above **.

Tip: To thicken your favourite fruit pie, replace all-purpose flour or cornstarch one-for-one with Club House Minute Tapioca.
