"You Pick the Trail" Mix



Dairy Free Nut Free Fish Free Soy Free Gluten Free 

This is called “You Pick the Trail” Mix, since the recipe can be adapted to different allergens, preferences or tastes. Omit the nuts or oats… add in pumpkin seeds, quinoa flakes or ground flax seed. Get creative… and Happy travels!
 
2 cups GF Oats (do not use quick cooking oats for this recipe) 

2/3 cup puffed rice cereal – Check allergens.

1/3 cup coarsely chopped or sliced almonds - Omit for nut free.

2 tablespoons flaked coconut (sweetened or unsweetened)

1/2 cup raisins

2 tablespoons honey

1/2 teaspoon vanilla extract - Check allergens

½ teaspoon of cinnamon

Preheat oven to 350°F.

Spray a baking sheet with canola oil. Spread oats and cereal on the baking sheet. Bake for 8 minutes. Stir in almonds and coconut; bake until the oats are aromatic, about 8-10 minutes. Turn off the oven. Stir raisins into the mix. 
Microwave honey for 10 seconds in a microwavable cup. Stir in vanilla and cinnamon; drizzle over the mix and stir to coat. If more mix is needs, make more and repeat.  Return the mix to the turned-off warm oven and let cool completely, about 2 hours
