Full of flavor and fun...Have the kids help roll the popcorn balls! Substitute other nut butters for the peanut butter.

1 Tablespoon oil
¼ cup of popping corn
Salt to taste
½ cup honey
¼ cup peanut butter - or other nut-butter (Check label for allergens)
Vegetable oil, to oil hands when rolling popcorn balls

Pour the oil into the bottom of a large pot over high heat. Place two to three corn kernels in the hot oil. When one of the kernels pops, pour in the rest of the popcorn and cover. When the corn starts popping, shake the pan on the stove to prevent the popcorn from burning. Once the popcorn stops popping, about 1-2 minutes, remove from the stove. Salt according to taste and set aside.

In a saucepan over medium heat, bring the honey and the peanut butter to a steady boil. Stir constantly for about 20-30 seconds. Next, pout the honey-peanut butter mixture over the popcorn, and mix well until combined.

Oil your hands with a bit of vegetable oil, and shape the popcorn mixture into about a 2” to 2 ½” ball. Once rolled, place them on a cookie sheet.

Serve once cooled. Cover with plastic wrap when storing.

Makes 6-8 balls.
