Orange Sweet Potatoes

A nice twist on serving sweet potatoes… the citrus gives it a punch and the brown sugar sweetens the whole deal!

1 tablespoon butter
3 large sweet potatoes (or yams)
1 cup orange juice
1 teaspoon grated orange peel
¾ teaspoon salt
¼ teaspoon nutmeg
¼ teaspoon cinnamon
¼ tsp. ground black pepper
¼ cup packed brown sugar

Preheat the oven to 375 degrees.  Lightly coat a 9”x9” baking dish with olive oil.
Begin by browning the butter in a small skillet over medium heat by swirling the butter around in the skillet, until it turns a light brown color. Remove from heat and set aside.
Peel sweet potatoes or yams, cut in half lengthwise and then into ½” thick slices.  Place the slices in the oiled baking dish and pour the orange juice over them.  Sprinkle evenly with orange peel, salt, nutmeg and pepper.  Finish by topping with brown sugar and browned butter.  Cover with foil and bake 40 to 45 minutes or until sweet potatoes or yams are crisp-tender.  Uncover and cook 12 to 15 minutes or until juices are almost absorbed.
Makes 4 servings.
