Avocado and Bean Dip



Dairy Free Nut Free Fish Free Soy Free Gluten Free 

The beans add extra protein to this avocado dip. Add some chili peppers to add some zip to this dip!

2 ripe avocados
3-4 tablespoons lime or lemon juice
2 cloves of garlic, minced well
4 scallions, trimmed and chopped
2 tablespoons olive oil
¼ cup chopped cilantro
1 cup canned black beans, drained well
Salt and pepper to taste
Cayenne chili pepper (ground) to taste 

Peel, pit and dice the avocados into small bite sized pieces. Toss with one tablespoons of the citrus juice to prevent discoloration.

Put half of the avocado in a bowl with the garlic and scallions. Mash and make a smooth paste. Add the olive oil, remaining lime / lemon juice, cilantro, salt & pepper and mix well.

Gently fold in the beans and remaining avocado.

Serve well chilled with corn chips or fresh veggies.

Add more salt, pepper, olive oil, juice, or any other seasonings (some do like it hot – so add chili pepper if desired!)
