Mixed Fruit Brulee

Nut Free Fish Free Gluten Free

A delicious recipe, that uses light cream and non-fat unsweetened yogurt. A nice light alternative to the traditional heavy cream brulee. Two helpings please!

1 pound prepared, assorted fruit such as strawberries, raspberries, blueberries and cherries
¾ cup light cream
¾ cup non-fat unsweetened yogurt (Check label for allergens!)
1 teaspoon vanilla extract
4 tablespoons raw sugar

Divide the different fruit types evenly into 4 small, oven-proof ramekin dishes.  Mix the cream, unsweetened yogurt and vanilla together.  Spoon the mixture generously over the fruit.
Preheat the broiler.  Top each fruit serving with 1 tablespoon raw sugar.   Broil for 2-3 minutes, or until the sugar melts and begins to brown and caramelize.  Serve immediately.
