Mom’s Cure-All Chicken Soup



Dairy Free Nut Free Fish Free Soy Free Gluten Free 

The ultimate in comfort foods - and free of major allergens! Thanks Mom!

2 chicken breasts, with bones, skin removed
¼ cup white rice
2 carrots
2 celery stalks with tops
½ teaspoon thyme
½ teaspoon salt
1/8 teaspoon pepper

 
In large pot add enough water to cover the chicken breasts. Bring to a boil and cook for approximately 15-20 minutes. Remove from water and set aside to cool. Reserve liquid and skim any fatty substance off top.

Chop carrots and celery into small chunks. Chop celery tops / greens. De-bone the chicken breasts and tear into small pieces. Add chicken, rice, carrots, celery and tops, thyme and salt and pepper back into reserved liquid. Simmer for 1 hour.
