Chocolate Peppermint Bark

1 (12 ounce) package White, Semi-Sweet or Dark Chocolate Chips (Check label for allergens)
20 to 24 hard peppermint candies or 10-12 candy canes – coarsely crushed (Check label for allergens)
2-3 drops of peppermint oil

Crush the candy by placing them in a sealable plastic bag and rolling with a rolling pin (or other heavy object.) Using a strainer, shake the crushed candy and separate the small, fine pieces from the larger, chunkier pieces. Set both aside.  
Melt the chocolate in a double-boiler (or in the microwave according to package directions). Once melted, quickly stir in the finely crushed candy and the peppermint oil.
Line a baking sheet with waxed paper. Evenly spread the chocolate mixture on the baking sheet. Sprinkle the chocolate with the larger chunks of crushed candy.
Let stand for about 2 hours at room temperature until completely hardened. Break into uneven pieces. Store in an airtight container and refrigerate until ready to enjoy.
Makes about 2 dozen pieces.
