Citrus Shrimp Cocktail



Dairy Free Nut Free Soy Free Gluten Free 

A pleasant change from traditional shrimp cocktail with sauce! These shrimp are also delicious served over a bed of salad greens or tossed in a cold pasta salad!

1 pound medium peeled & deveined cooked shrimp
3/4 cup extra virgin olive oil
1 cup orange juice
1/8 cup fresh lemon juice
1/8 cup fresh lime juice
¼ cup white wine
1 large lemon, cut into thin slices
2 small red onions, halved and cut into thin slices
4 cloves garlic, cut in half lengthwise
Salt and pepper to taste
1/8 to 1/2 teaspoon red pepper flakes (depending on taste!)
For Garnish: Several large leaves of lettuce (such as romaine, Boston, red or green leaf)

In a saucepan, combine the olive oil, the orange, lemon and lime juices, wine, several lemon slices, onions, garlic, salt and pepper to taste, and the red pepper flakes (if using). Bring to a boil over medium heat.  While still hot, pour mixture over the shrimp in a large bowl.  Cool shrimp/mixture to room temperature.  Cover and refrigerate overnight, but for best results marinade for 24 hours.

When ready to serve, remove shrimp from the marinade using a slotted spoon and arrange over the lettuce on a large platter.

Serve with additional lemon slices.
