Pesto Marinated Shrimp with Guacamole



Nut Free Soy Free Gluten Free 

A great appetizer for when you have a hungry crowd!

15 -30 raw shrimp - deveined, shelled, and tails removed
About 1 cup of Classic Basil Pesto (check ingredients for allergens and make substitutions as necessary)
About 1 cup of guacamole
Round gluten-free crackers -- like Glutino crackers (check label for allergens!)
About 1 cup of tomatoes - diced
½ cup sour cream (check label for allergens!)

Place shrimp in zipper bag, or covered dish. Add the pesto and toss to coat. Place in the refrigerator and let marinade for 2-3 hours.

When ready to serve, pre-heat broiler. Spread shrimp on cookie sheet and broil for 5-8 minutes or until pink and fully cooked, turning ½ way through cooking time. 

While shrimp is broiling, top crackers with guacamole, a small amount of diced tomatoes and a small dollop of sour cream. Finish by placing a broiled shrimp on top.  Serve immediately.

Serves about 15-20 as an appetizer.
