Sweet Italian Sausage Mac & Cheese Bake



Nut Free Fish Free Gluten Free 

A nice change from traditional macaroni and cheese. Swap out the sausage and add in ground beef for a lower-cost and kid-friendly version.

1 tablespoon olive oil
¾ pound of ground sweet Italian sausage (Check label for allergens)
3 tablespoons butter
3 tablespoons gluten-free all purpose flour(Check label for allergens)
2 cups of milk
About 4 cups of uncooked gluten-free penne pasta (Check label for allergens)
½ cup of fresh grated Parmesan cheese
Salt and pepper, to taste
½ cup of shredded mozzarella cheese
Sprinkle of paprika

Preheat the oven to 400 degrees F.

Coat an 11” x 7” baking pan with olive oil and set aside.

Cook the gluten-free pasta according to package directions, drain well and set aside.

As the pasta is cooking, cook the sausage in a large skillet until browned and crumbly. Drain well to remove all grease, and set the sausage aside on a plate coated with a paper towel. Lightly wipe the skillet with a paper towel, and melt the butter over medium heat. Next add the gluten free all-purpose flour, and combine well with a whisk. Next add the milk, a bit at a time, while continually mixing with the whisk, until mixture is smooth – about 10 minutes. Remove from the heat.

In a large bowl place the cooked pasta, milk / flour mixture, sausage and the parmesan cheese. Toss very gently to blend, and then spoon carefully into the prepared baking dish. Sprinkle with the mozzarella cheese and the sprinkle of paprika.

Bale for about 20 minutes or until the top starts to brown slightly.

Serve hot. Serves 4.
