Creamy Milk Chocolate Pudding

Rich and creamy, this is a quick and easy dessert made with only 6 ingredients... Enjoy!

½ cup sugar
2 tablespoons cornstarch
2 cups milk
1 1/2 oz. semisweet chocolate, chopped finely (Check label for allergens!)
1 large egg, beaten lightly (in a large mixing bowl)
1 teaspoon vanilla extract

In a medium saucepan combine sugar and cornstarch; slowly add milk, stirring with a whisk until well-blended.  Little by little stir in the chocolate.  Bring to a boil over medium heat; cook for 6 minutes, stirring constantly.

Gradually add hot milk / chocolate mixture to the egg, stirring constantly with a whisk.  Return mixture to the saucepan, and cook until thick and bubbly (about 45 seconds), stirring continuously. Remove from heat and stir in vanilla.  Spoon mixture into a bowl and put plastic wrap over the top. Refrigerate and serve when cooled.
