Win-It-Wednesday: XO Baking Company Gluten-Free Pound Cake Mix

When I was a little girl my Mom would always bake up her soft, buttery and moist pound cake. To this day, I can still imagine the thick buttery slice, topped with fresh ripened berries and a dollop (well, okay… more like a scoop) of homemade whipped cream.

For years after being diagnosed with celiac disease and being on a gluten-free diet I have been dreaming about this little slice of heaven.

And thanks to discovering the XO Baking Company Gluten-Free Pound Cake Mix my dream has once again come true.

All of the XO Baking Mixes are Certified Gluten Free through the Gluten Free Certification Organization (GFCO).  This means that they test every one of their products to ensure that they are safe for those with a gluten intolerance, sensitivity or celiac disease.     My first choice would be a pound cake. Especially in the Summer as a quick base for fruit desserts. Second choice would be the pie crust mix- I make terrible pie crust

    the pound cake actually sounds the best to me although I would love to try all the different mixes they offer. I have never made a pound cake prior or after being diagnosed with Celiac Disease so making a pound cake sounds good.

    I love this gf brand- there is no grittiness like so many other gf mixes. I have tried their cookie mixes, cake, brownies. But I haven’t seen the poundcake in my stores so I hope I win!

    They all sound so yummy! However, number one on my list would be banana bread. I’ve tried and tried to make banana bread and muffins with almond and/or coconut flour and they just don’t come out with the taste and texture like the standard gluten recipes. Course, I’m not picky. I love love love pound cake and I’ve never seen a gluten free pound cake anywhere.
