WIN-It-Wednesday: For Jackie Home Baked Cookies

Cookies should be sweet and chewy. Period. The type of cookie that leaves you wishing for a second. A gluten-free cookie that is worth every single calorie. Basically – I want the cookies I eat to be worth it.

That is why I am so excited to once again have Jackie Home Baked Cookies as this week’s BeFreeForMe WIN-It-Wednesday sponsor! These cookies are jammed packed with chocolate and coconut. Sweet and chewy perfection!

I think that I love these cookies so much because they are a cross between two of my all time favorite cookies: Chocolate Chip and Macaroons. Appropriately named “More than a Macaroon” they are the perfect combination of nutty coconut and sweet chocolate. The best of both worlds.

These cookies are also extra special because they are made by a Mom & Dad on a quest to make the best cookie possible for their daughter, Jackie, who was diagnosed with celiac disease several years ago. These parents started baking up all of their favorite recipes gluten-free to adapt to their daughters new lifestyle, when they stumbled upon what they describe as “… the creation of a caramelized, coconut confection that tasted like nothing we had ever had. It took macaroons to new heights and was a true decadent experience.”
And decadent these cookies are. Just one and you will be hooked – so beware. Don’t say that I didn’t caution you. Also, I am warning you that gluten-eaters will love these too. So determine your hiding place for these cookies before you bring them into your home.

    I try to live my life “sweet” by always trying to help others in need. I read about a woman I had never met who was doing a vigil for her dying husband at a hospital. She had celiac and one of the blogs I read organized meals/snacks to be delivered to her. Even though my life was crazy at the time, I put myself in her shoes and realized it would be so hard to trust someone to make you a meal that doesn’t fully understand what is involved in cooking gluten free.

    We are a family of 9 with 7 children ages 9 down to 2 months. We have a Basset Hound Puppy and a small beef farm as well as goats, chickens, and a large vegetable garden. Enough Said!

    I would love to win these cookies for my daughter Lindsay who is gluten free. Macaroons and chocolate are her two favorite food groups….or at least she thinks they should be a food group! I’m so proud of her, she graduated and got a job teaching 5th grade in Norman, Oklahoma. She is nutty spending countless hours in her classroom trying to make a wonderful experience for her 5th grade students. When she is out of the classroom she is going to her students football games and cheering them on or dance recitals to give a standing ovation! She gets the sweet reward when the light bulb goes off in her students head or when, for the first time, a student brought her in a big shining red apple (something she can actually eat)!

    I am a little nutty, because working fulltime, being a wife and a mom, and housework make that way, haha. I am sweet ’cause I love taking care of my friends and family, and would do anything that someone asked (whether I have the time or not). I would like to win these cookies for my 2 year old. I make him many of the boxed cookies to have as snacks, but hard to send to school as the crumble and break before he gets to eat them. Every child deserves a delicious cookie and these sound perfect.

    i’m a little nutty because my mom and i are best friends! it’s pretty normal to us except to other people it’s weird. I’m 15 and everybody thinks we are sisters. we are the real life ‘gilmore girls!’ She’s always there for me and we do everything together. And this past summer we drove across country!

    I am definitely “nutty” at times because I am known for my humour with play on words, and sometimes they backfire…and my hubby and kids roll their eyes. Other times, though, they are quite witty, and my husband can vouch for that. He’ll say they can go either way. And at the same time, it’s considered “sweet” because whether they’re good or bad, they’re always cute…I can hear my hubby saying. “I see you’ve taken your self-esteem pill today!” LOL 😀

    I’m always nutty! I’m sweet because I insist on starting each day with at least 10 minutes of husband cuddling. If everyone in the world started their days that way, I think the world would be a better place! Oops, excuse me, my nuttiness is showing. LOL

    I can be a little nutty when it comes to my dog, Emiol. He is my baby and I fear the day I lose him. He just had a pulled toenail and I took him to the emergency room. The vet said I was the first person to call a pulled toenail an emergency. I couldn’t help it. He was in pain and bleeding and I couldn’t make it go away. Thank goodness for emergency rooms at the vet’s office. Sweets come into my life in many varieties. I have several neices and nephews and my baby, Emiol. They do the things that make me sweet. My two-year-old nephew calls me My Heidi instead of Aunt Heidi. Emiol has decided he can only be walked by me now and not his babysitter, who by the way is so worried about that. My five-year-old neice always want to go work out with me. They are my sweets.

    Nutty is when I dig for my potatoes three times trying hard to find more in the ground (there never are) and sweet is when I make a big lunch of green bean salad and fresh salsa for my hardworking boyfriend.

    I’m a little nutty because I don’t mind being woken up constantly by our baby just so I can see her face in the middle of the night (my husband says I’m crazy!) and I’m a little sweet for cooking my husband’s favorite meals allergen-free whenever I can come up with good substitutions!

    We are a little nutty because 14 years ago, I married a divorcee with two daughters. Today we also have children together. In total, we have three girls and one boy, 19, 17, 10 & 7 years old. We have two boy cats who way over 20 each to make up for our lack of boys in the house. The nuttiest part is that I LOVE my husband’s ex-wife. We get along like sisters. We talked on the phone today about holiday plans. The 7 of us plus ex-wife’s new boyfriend had dinner together last weekend and it was our normal. I think that we might have scared the new boyfriend though…

    Chocolate AND Coconut??!! My two favorites!! My family has been offically nutty when we decided to get a puppy upon me returning home from a medical procedure and my son starting Pre-K, and start the potty and obedience training all while getting our 14 year old dog accustomed to the new addition. The house has not had a quiet moment since! And the sweetness of this is when we are all laughing having fun playing with the 2 dogs!

    I am a little nutty because I talk to the wild birds that I feed . I sing their songs to let them know I just filled up the feeder.I am sweet because I feed the birds in the cold ,harsh winter . My family resuced an injuried owl once and took it to a wild animal rescue .

    I guess sweet and nutty describes me to a T – my church friends always say I am sweet and my husband called me Sweety and well nutty that just sums up my whole life most of the time.

    I am grateful that I have a Lord and Savior that accepts, loves and forgives me no matter how I am.

    I’m alot nutty because I have alot of energy and my job working with kids all day/evening can make me just be a kid at times as well! I love to laugh and have fun and the kids catch on to the energy! I am sweet as well because these disadvantaged kids also receive kindness and understanding and love when they are with me!

    Many think I’m a little nutty because I enjoy riding my motorcycle in the rain. The air is so fresh, clean and sweet smelling, plus the colors are more vivid. My sweet side is baking my hubby’s favorite apple/spice cake or sour cherrie pie just for him.

    I am a bit nutty-what would life be if I was not. I think everyone is a little nutty!I know I’m not normal but then , what is normal ? I like walking in the rain,listening to oldies on the radio, just being carefree ! I’m also sweet because I like doing nice things for other people ! At Christmas I really like the look on someones face when you give them something really nice and don’t expect something back ! I would rather give than get !
