    I feel so fortunate that I was diagnosed with Celiac Disease when I did! It is hard to think about all the undiagnosed people out there that are suffering . . . Let’s all try to spread the word about Celiac Disease! I also feel fortunate that we have some pretty incredible gluten-free flours to bake with now as well as wonderful products on the market. You don’t need to feel deprived if you are gluten-free now!

    I am lucky because after several years of seeing different doctors and putting my poor daughter through so many tests we discovered she had celiac disease. I’m lucky because after removing gluten from her diet, she gained 15 pounds and grew 6 inches in one year. I’m lucky because all we had to do to “cure” her and make her completely healthy again was to remove one little ingredient from her diet. I’m lucky because instead of a sickly 6 year old, she is now a healthy and thriving 12 year old.

    I’m lucky to had been diagnosed in 2010. I was laid off from my job at the end of the year and it was a year ago right now that I started getting sick. Back then I had the financial resources to see specialist to figure out what was wrong. Now I’m going to school full time, I’m healthy and I have the support of my partner and family.

    My 16 yr old daughter loves granola bars, they were one of her favorite school snack foods before recently getting diagnosed with celiac just before Christmas. Now being in a financial situation it is one of the gluten free foods that we can’t afford to buy so this would be a treat for her. =)

    I am BLESSED to have the most amazing husband who has put up with me and my health issues for 19 years. I had gained a lot of weight and was about 420 lbs. and this man stood by me and helped me take care of my personal grooming needs and believed in me! I was able to lose 180 lbs. and he was so instrumental in helping me overcome the emotional obstacles that kept me from believing in myself. I am BLESSED that this amazing man has also helped my Mother and has treated her like she was his own mother (she is disabled); she lives with us and has for the past 12 years. During our whole marriage one member of my family or another needed to live with us and he has never complained. He has been such a strength and a hero to me. Without that blessing in my life, I would not be able to cope with my many illnesses and the fact we were never able to have children. I am also truly BLESSED with in-laws who treat me like their own. How can I go wrong with these people in my life? Sometimes it’s easier to see the worst in people, but God has blessed me with the ability to see the good in people – that’s a wonderful blessing!

    I feel blessed because of the amazing mother I have. My mom was in the hospital with me when I was 10 years old in a room surrounded by vials and needles, when doctors told me I had type 1 diabetes. It is because of the way my mom raised me, as a normal child on shots and counting carbs, that I am able to see my “disability” and just the opposite. I see my “disability” as something that has given me so much hope, pride and a sense of accomplishment because I have been able to live with it for over a decade successfully, which is something that people 80 years ago would not have been able to do or even conceive.
    So, that is why I feel blessed for my incredible mom.

    When I first found out I could not have gluten, yeast, dairy or eggs I was devastated! I was going to culinary school to pursue baking and pastries! As soon as I got used to the fact that I would never be able to pursue that dream, I made another goal to become a specialty chef and dietician to help other people with the allergies and intolerances, and to be able to enjoy food and life again. I am having so much fun experimenting with different recipes and trying different products. I am very lucky to have support from all my family and friends, and others going through the same experience. It has become a wonderful journey for me.

    I am lucky for so many reasons. I was in a car accident about a year ago now that could have killed me, but I am here today. I have spent the last year re-learning how to do everything again, and, by the grace of God and a lot of hard work, I am back up and moving again. It may not be the same, but I am able to do so much more than anyone ever imagined. I can not only use my legs, I can take steps and will soon be able to walk fully.     I am so glad to finally have an answer. My seen year old son just got diagnosed with celiac. It was the answer to why he was always sick. He finally feels good.
